Doughnut Holes (Fritule)
Ingredients
3 C. flour
1 Tbsp. baking powder
1 tsp. salt
1/4 cup butter (melted)
1/2 cup sugar (divided between egg whites and egg yolks)
3 large eggs (separated)
1 C. yogurt
1 apple, peeled and grated
1 Tbsp. of hard liquor
Method:
In a large mixing bowl, combine flour, baking powder and salt. Set aside.
In a separate bowl, beat egg whites, adding 1/4 C. sugar. Beat until stiff peaks form. Set aside.
In another bowl, beat egg yolks with 1/4 C. sugar.
To the egg yolk mixture, add yogurt, apple, liquor, flour mixture, and beaten egg whites. Using a whisk, beat all ingredients together.
Cover bowl with plastic wrap and let mixture rest for about 30 minutes (up to one hour).
Heat vegetable oil in a Dutch oven. Bring oil to moderate heat.
Scoop fritule mixture with a teaspoon or tablespoon (depending on how big you want them) and drop into the hot oil. Fry the fritule until they are evenly golden on all sides.
While the first batch is frying, line a clean bowl with a paper towel.
When golden, remove fritule with a slotted spoon and place them on the paper towel (the paper towel will soak up some of the excess oil).
Sprinkle with icing sugar, if desired.
