Breaded Meat (Šnicle)
Ingredients
Chicken breast fillets, fast-fry pork chops (boneless), pork or beef tenderloin (cut into thin slices)
½ C. flour
½ C. bread crumbs or Panko
Or choose gluten-free flour and breadcrumb option
2 eggs, beaten (usually sufficient for 8 slices of šnicle)
Salt
Pepper
Vegetable oil
Method
Slice meat into thin slices (about ½ inch) or use chicken breast fillets. Trim excess fat. Wash, pat dry.
Season meat with salt and pepper, to taste.
Prepare three bowls for dipping the meat. In one bowl, place flour, in another place the breadcrumbs and in the third, the beaten eggs.
Take one piece of meat and dip it in the flour, then into the egg, then into the breadcrumbs. Shake off excess breadcrumbs.
Place meat on a platter until ready to fry.
In a frying pan, heat vegetable oil until hot. Turn down heat to moderate.
Fry šnicle until golden, turning as needed.
Remove from oil and let drain on paper towels.
Serve with vegetable of choice. Also good with French fries.
NOTE: If the frying oil starts to foam, discard that oil and start with fresh oil to fry the remainder of the šnicle.
