Fish Soup (Riblja Juha)
Ingredients
1 small onion (cut in half and each half sliced into fine threads)
2-3 garlic cloves, diced
3 tomatoes, chopped
2 celery ribs, chopped
2-3 carrots, chopped
Bay leaf
Salt
Pepper
Olive oil
4 C. water
200 gm white fish such as halibut, snapper, cod, sole
Flat leaf parsley (Italian parsley), chopped
Method
Place a stock pot on the stove.
Add a splash of olive oil to the pot.
Add onions and cook until golden.
Add garlic and cook for 2-3 minutes.
Add tomatoes, celery, carrots, bay leaf, salt and pepper. Stir to combine flavours
Add water and bring to a boil.
When soup starts boiling, turn it down to a medium (or low) heat and maintain a low boil for about 20 minutes.
Add chopped fish. Cook for another 10 minutes.
Add parsley. Stir to blend flavours.
Remove from heat.
If required, add more salt and pepper before serving.
