Crepes (Palačinke)
Ingredients
3 eggs
2 C. whole milk
1 C. soda water (e.g., club soda) or other fizzy drink
¼ tsp. salt (or ‘sprinkle’)
1 Tbsp. vegetable oil (not olive oil)
2 C. flour
Method
With a whisk, beat the eggs until frothy. Add the milk, soda water, salt & oil. Use whisk to mix together. Add the flour and whisk until you have a smooth batter.
Depending on size of crepe pan, you will need about ¼ to ½ C of the batter in the pan for each crepe. As an example, for a 26 cm crepe pan, I use almost 1/3 C. of batter for each crepe.
Heat the crepe pan (or non-stick frying pan) and put one tsp. of vegetable oil into the pan.
Pour required amount of batter into the pan and quickly spread the batter to cover the pan by rotating the pan until the batter covers the pan. This is best done by raising the pan off the heat and then rotating the pan (some good wrist action is needed 😊).
When batter looks like it’s dry in the pan, flip the crepe and cook the other side. It will take about one minute (or less) per side to cook the crepe.
Stack finished crepes on a plate.
Spread each crepe with your favourite filling – jam, chocolate or walnut filling. Fold into a roll or fold in half and then fold in half again (to get a triangle shape).
